Corn cake

So easy to bake, a literal piece of cake!

As I have written before, June is a very special month in the Northeast of Brazil because of the June festivities that celebrate St. Anthony, St. John and St. Peter.

I also mentioned that the typical food especially made during this time of the year is based on corn, that's why I decided to share a corn cake recipe with you.

You'll need

1 can of sweet condensed milk
1 can of corn
3 eggs
1 table spoon of butter
1 table spoon of baking powder
1 package of grated coconut

Pre-heat your oven to 180°C

Mix all ingredients in a blender, except for the grated coconut. Then pour the mixture in a bowl and add the grated coconut to it, then mix everything uniformly with a wooden spoon.

Grease a loaf pan with butter and pour the dough in it. Let it bake for about 30 minutes.

The result is a fluffy and yet creamy cake that goes really well with coffee!
